how about using Strobe? You can analyse your application, pinpoint which are the most CPU intensive queries, use the EXPLAIN functionality in iStrobe, and generally manage your DB2 applications' performance (and have a look at outside/around DB2, too).

Looks like you're out of luck. From the V7 Utility manual, under Listdef:

You can specify the database-name explicitly or as a pattern-matched name. DATABASE * and DATABASE % are not supported.

So what you were doing (A*, B*, etc) looks to be the only way.

The packages will not be invalidated unless you do the following like dropping the reference table or alias or adding another index or column to the same table or played with any grants.
